Star anise is a pretty, star-shaped spice that adds a fragrant, aniseed favour. It’s great in curries or added to rice for a little extra flavour. You can buy packs of whole ones, but you–ll often pay a little more for those. It’s fine just to use broken up pieces – the equivalent of 2 whole ones. Cinnamon can be overpowering if strong, and whole sticks can vary in size, so taste at intervals and fish it out once you’ve got enough of the favour. Serve with basmati rice.
