Fish tacos are, I think, my favourite of all tacos and I’ve had merry afternoons on Mexican beaches ramming them in until I could not move for one more.

The best thing to do is then take to the hammock and drink cold beer until dinner. The quick guacamole below is typical to Guadalajara, in the western Pacific area of Mexico. Ensure that the avocados are ripe, as when hard the guacamole is hopeless and, when overripe, brown and unappetizing.
