Hot chocolate and churros is a snack beloved thoughout Spain. For the hot chocolate, the thicker and richer, the better. Churros, hot and crisp from the fryer and glittering with cinnamon and sugar, are the traditional accompaniment—perfect for dunking.

Pour 5½ cups of the milk into a large, heavy-bottomed saucepan. In a small bowl or cup, stir together the cornstarch, cocoa powder, sugar, and salt.
