This recipe is adapted from the simple version in The Joy of Cooking. Cut these fluffy marshmallows into big squares perfect for dunking in the warm chocolate fondue.

Method

Pour ½ cup of the Cold Water into a Large Mixing Bowl or the Bowl of a Mixer. Sprinkle the gelatin evenly over the water and allow the gelatin to sit and absorb all the water, 45 to 60 minutes.
