Food on a stick just makes people smile. These adorable, chocolate-dipped bites of New York cheesecake are fun, and perfect party fare. I like to use wafer chocolate, or confectionery coating, for dipping the pops. Available in dark, milk, and white chocolate varieties, as well as a rainbow of colors, it doesn’t need to be tempered and makes for easier dipping. To dress up your pops, you can roll them in crushed nuts, coarse sanding sugar, colorful jimmies, toffee bits, or mini chocolate ch
