Make sure to prepare pralines on a warm, dry day. Moisture and humidity can turn tender, brown-sugar-sweet, fudgy pralines into sticky little puddles of goo.

Spray the Sides of a Heavy 2-quart Saucepan with Nonstick Cooking Spray. Combine the granulated sugar, brown sugar, salt, corn syrup, and cream and in the pan. Heat slowly over low heat, stirring constantly, until the sugars are melted and the mixture is smooth. Increase the heat to medium-high and bring the mixture to a boil. Boi
