Method

  1. In a rondeau or similar pan over medium heat, melt the butter and allow to brown until golden, about 30 seconds. Add the ginger and sweat for 10 seconds. Add the Arborio rice and continue sweating until every grain is evenly coated with the brown butter. Add the milk and brown sugar to the rice, and bring to a boil over moderate heat, stirring occasionally.
