Psaria plaki is a Greek dish of fish baked in a garlicky tomato sauce. I’ve used trout here, but you can use whatever type of fish you like best, whether it is whole fish, steaks or fillets (though fillets will cook more quickly). If cooking for more than two people, make enough sauce to cover all the fish, and remember to allow a little longer cooking time.
