This kind of glaze is often used for whole gammon joints, hence the name.

Ingredients

  • 2 pork chops, about 2 cm (¾ inch) thick

Method

Preheat the oven to Gas Mark 3/160°C/325°F. Trim any excess fat from the chops and smear them with mustard on both sides. Sprinkle the sugar evenly over both sides of the chops, pressing it in gently to coat. Put the chops in a small, greased, ovenproof dish and pour over the orange ju
