Chilled Tomato Soup with Cucumber

This alternative to gazpacho is lighter in style. If you want a more Catalan flavour, you can add small amounts of red pepper, cut into tiny dice, with the diced cucumber.

Ingredients

  • 1 large cucumber, peeled and seeded, cut in pieces
  • 1 kg very ripe, red tomatoes, skinned and roughly chopped

Method

Peel the cucumber and cut it in half. Remove the seeds from one half and put the flesh in the bowl of a food processor. Add the tomatoes and their juice, the garlic and the onion and pulse until all is thoroughly liquidized. Push the mixture through a wire sieve into a bowl, using a wooden spoon or a pestle to extract every bit of liquid.
