Squid and cuttlefish come in all sizes, from 2 cm long to half a metre or more. They are one of the staple fish of the Mediterranean (and,incidentally, the Adriatic) and can be bought on the markets already beautifully prepared, or whole and swimming in their own ink – I would be inclined to buy the prepared ones for this dish.
