Les calanques are the deep salt water creeks one sees from the train, as it slides between the Mediterranean and the marshes close to the salty vineyards of Listel (where a good vin rosé is made) on the route from Montpellier to Béziers. If you have time to do the preparation an hour or two before you cook the fish, the flavours will permeate the flesh, making it even more fragrant.
