This is how the ladies of Saint-Chinian enjoy their anchovies on a Sunday – they buy them fresh on the market, and they take them straight home (anchovies are best when very fresh). You could equally well use this recipe for fresh sprats or small sardines. You can tell the difference as anchovies have a thinner, lighter body and larger mouth than sardines.
