This is a refreshing salad with a light dressing that is simple and quick to prepare.


  • 250 g (8 oz) watercress, washed, stems removed
  • 180 g (


  1. Place all the salad ingredients in a large serving bowl. Cover and refrigerate for 1 hour, or until well chilled.
  2. To make the dressing, whisk together all the dressing ingredients. Add to the salad, toss well, and season to taste with salt and freshly ground pepper.
