These tuna steaks are infused with Oriental flavours and are seared quickly to great effect. The chickpea salad is very versatile, and is also lovely with grilled vegetables or chicken.


  • 125 g (4 oz) dried chickpeas (see Chef’s tip)
  • 4 tuna steaks


  1. Soak the chickpeas overnight in plenty of cold water.
  2. Combine the marinade ingredients and mix well. Place the tuna steaks in a shallow glass or ceramic dish and pour on a third of the marinade, turning to coat both sides. Cover with plastic wrap and refrigerate for 3–4 hours, turning the tuna occasionally.
