This is my mother’s recipe for a fragrant coriander seed and fresh chilli masala. It’s simple and quick to make and is wonderful added to marinades, curries or vegetable stir-frys. Store in an airtight container in the fridge for up to 4 days.

Ingredients

Grind together in a wet spice grinder, adding 2 tbsp of water

  • 1 tbsp dry-roasted coriander seeds
  • 1 tbsp dry-roasted cumin
