Caramelised Pear Jelly

• Chocolate 75%, Pear & Hazelnut

I set this jelly mix into small spherical moulds that I picked up on my travels. Spherical moulds are now common in specialist food stores. Once the jelly has been set we freeze them and then ‘pop’ out the jelly spheres and allow them to thaw.
