This is exactly the same technique as for the Gin and Tonic Soft-Set Jelly Centres, but the whole family can enjoy these!

Method

  1. Heat the sugar syrup in a saucepan over medium heat and bring to boiling point.

  2. Remove from the heat, add the soaked gelatine and stir well for 1 minute to ensure it has dissolved.

  3. Add the raspberry purée and stir well.

  4. Strain the mixture through a sieve into a jug (pitcher) and fill silicone hemisphere moulds <
