  • 100 g ( oz) sieved lime juice (about 4 limes)

Method

  1. Place the juice, eggs, sugar and butter into a microwave-proof bowl and mix well with a hand whisk for 10 seconds. Heat the mixture in 20-second bursts on high in the microwave, whisking well after each burst, until the curd is thick and bubbling. The entire cooking process should take no longer than 5 minutes depending on the output of your microwave.
