  • 300 g (10½ oz) milk, white or caramelised white chocolate (depending on the product to be sprayed)

Method

  1. Melt the chocolate to a temperature of 45°C (113°F). Separately melt the cocoa butter to a temperature of 50°C (122°F).

  2. Mix the two liquids together in a clean bowl, stirring well with a silicone spatula. Once they are combined, pass the solution through a fine sieve into a jug (pitcher).
