These cookies are a play on the soft, chewy ginger or molasses cookies I loved to eat growing up in Canada, only instead of molasses adding the flavour and chew, this recipe employs Birnenhonig, a syrup made from pears.
I like using Birnel, a lighter version of the syrup, but if you prefer a more powerfully fruity taste go with a darker one.
