So profusely does wild thyme grow in Provence that the poet Aubanel went into Paptures on discovering Provençal shepherdesses whose feet were thyme-scented from walking barefoot through the fields. Of less poetic but more culinary interest: local rabbits, living on a regular diet of thymus vulgaris, need almost no extra seasoning. Paulette’s recipe, however, will make even the blandest northern rabbit taste good.
