  • 8 oz/250 g plain white flour
  • pinch of cinnamon

Method

In Séguret the older cooks make this pie as they always have done: with the orange-scented Fougasse dough sprinkled with extra orange flower water after cooking. Paulette Antilogus, further north in Vaison la Romaine, prefers the crunchier texture of shortcrust pastry. Both are good.
