This is a very unusual bread taking the form of a thin, crisp sheet - hence the name, carta di musica. If you imagine A4-size melba toast, you get the idea.

If you are interested in breadmaking, this is great fun to make in the kitchen, and the ‘sheets’ - which buckle when you toast them - look very dramatic in a tall pile served with evening drinks. There is another bonus: if there is any left over, it makes the most remarkable crunchy sandwiches.
