This is an impeccable flourless chocolate cake. Glazed and served in slices, it makes a glamorous finish to a dinner party or celebration meal. We also use a round cutter to create miniature cakes for our Deconstructed Black Forest Gateau.

Ingredients

  • 340 g 70% cocoa solids chocolate, chopped
  • 175 g unsalted butter

Method

Melt the chocolate and butter (such as in a jug or bowl in the microwave) and stir till smooth.

Whisk the eggs, sugar, vanilla, good pinch of salt and 2 tbsp water in a food mixer till foamy, pale and doubled in volume - about 2 minutes. Reduce the speed and pour in the chocolate mixture. Add the cocoa and continue to mix for 30 seconds. Pour in
