Chillies are great fun to grow but you end up with far more than you can possibly use. This bread does not really solve the problem, but it is fun to serve dotted with specks of different-coloured home-grown chillies.
Mix the yeast into the water in your mixer bowl and add the flour, 1½ tsp salt and the olive oil. Start mixing slowly, using the dough hook attachment, then knead for about 5 minutes, adding the chillies, ¾ of the Comté and ½ of the Parmesan halfway through.
