Ingredients

  • 175 g unsalted butter, softened
  • 200 g brown sugar

Method

Using an electric mixer, cream the butter and sugars, then add the eggs, vanilla and rum. Add the bananas - the mixture will probably curdle.

Mix the flour, bicarb, nutmeg and ½ tsp salt, and add this to the banana mixture, with the machine still running, in batches, alternately with the coconut milk. Stir in the coconut and transfer to the tin or tins.

Bake at 180°C (160°C fan)
