Home-made yogurt is much superior to bought. This is our most popular, and luxurious, flavour. We can buy vanilla powder from the spice lady in Carmaux market - it is made from powdered pods and gives a pleasing speckled surface to the yogurts.

Ingredients

  • 1 gelatine leaf
  • 80 ml evaporated (unsweetened) milk
  • 2 tbsp

Method

Soak the gelatine leaf in cold water while you assemble the other ingredients. Then squeeze out the leaf and put in a large measuring jug with the evaporated milk. Microwave for about 30 seconds, till the milk is hot and the gelatine has dissolved. Whisk well then stir in the skimmed-milk powder and about a quarter of the milk. Whisk again and stir in the yogurt, then the rest of the milk. At t
