Crunchy pickled red cabbage is just the thing when you’d like a little crunch on your taco but you’re all out of lettuce and don’t want anything as intrusive as raw onion. Be sure to slice the cabbage evenly and thinly, avoiding the tough white core of the cabbage as you slice.
