The name of these popular meat kebabs, ‘morunos’, means ‘Moorish’ and, to make an obvious pun, they are certainly ‘moreish’. Use good-quality pork (a southern Spanish substitute for the Moors’ lamb), preferably organic, in order to make tender, highly-flavoured kebabs. They are ideally cooked on a barbecue, but taste fine cooked on a standard grill.
