The dough is pricked before it is cooked on a griddle so the envelopes of raised dough can cook in the fat which escapes from the filling. Eaten as a snack khobz bishemar is a delicious bread almost like a pastry or even, if it contains tomato and a little brebis cheese, an enclosed Moroccan pizza.

  1. Make dough as in steps 1 and 2 of recipe for Moroccan bread.
  2. Form dough into four equal pieces and with lightly oiled hands, form each piece into a round ball.
