A revolutionary new way of making warkha pastry leaves is the modern manner given to me by my friend Said Alaoui of Kenitra whose mother prepares a very liquid mixture to make her warkha leaves and then ‘paints’ the heated tbsil pan with a thin layer of the mixture using a large, flat brush to spread the mixture evenly over the pan. She then proceeds to bake the warkha pastry leaves in the traditional manner.
