The grilled peppers give a smoky taste to this salad. Diced cucumbers, salted and rinsed, could also be added instead of, or with, the peppers.

  • 2 large green bell peppers (or 4 long thin green peppers), grilled (broiled or barbecued) and skinned

  1. Prepare the vegetables. Stem and seed grilled green peppers, then wash and cut flesh into 6 mm/¼ inch dice. Cut tomatoes into 6 mm/¼ inch dice. Add to diced green peppers. Cut onion into 6 mm/¼ inch slices, then cut slices into dice. Add to diced green peppers and tomatoes. Mix well.
