This, a great salad to accompany grilled (broiled or barbecued) sardines or other fish, is served at the quay-side restaurants of the old port of Essaouira. Delicious.

Method

Make salad as above, and add diced preserved lemon peel and a tablespoon or two of the juices in which the lemons were preserved. Mix well and chill.
