Ingredients

  • 700 g/ lb carrots, peeled
  • salt

Method

  1. Cook carrots in boiling salted water until tender. Drain, then grate coarsely.
  2. Place grated carrots in a small saucepan with the aromatics. Add olive oil and vinegar and simmer gently for 10 minutes, stirring constantly. Correct seasoning, adding more salt, cumin, sweet red pepper and a squeeze of lemon juice, if desired. Allow to cool.
