This is a very visual appetizer salad which Fatima serves as the first course of a light supper, to be followed by brochettes of lamb in a savoury chermoula marinade accompanied by rice or rice-shaped pasta tossed in aromatic butter.

The dish is most attractive if all the vegetable slices are equal in diameter or, better yet, if each successive tier, starting with the tomato base, is slightly smaller than the one under it.
