  • 900 g/2 lb courgettes (zucchini), washed and trimmed
  • olive oil

Method

  1. To make chermoula, combine the first seven ingredients in a bowl. Add olive oil and water and mix well.
  2. Cut courgettes (zucchini) into eighths lengthways and place strips in a large shallow casserole. Spoon over the chermoula mixture and add a little more olive oil and water, if pan seems too dry. Cook over a medium heat until courgettes (zucchini) are t
