  • 225 g/½ lb (2 cups) ground almonds

Method

  1. In a small saucepan combine ground almonds with icing (confectioners’) sugar. Stir in finely grated lemon zest and cook over a very low heat, stirring constantly, for 10–15 minutes. Remove from heat and leave to cool.
  2. Beat egg whites until stiff and add gradually to almond and sugar mixture. Place in a piping bag.
