Crunchy, sweet green beans, stir-fried with gently pungent garlic is another speedy dish enjoyed throughout China. It exemplifies the Chinese ideal of simple but healthy, delicious food. Several varieties of fresh green beans can be used, the most dramatic being the famous Chinese yard long beans. Some do actually attain such a length, but are of course cut into stir-fry-size pieces.
