Chinese water spinach is a very popular vegetable throughout south and southwest China in both restaurants and homes. Chinese water spinach differs from the European variety in that it has hollow stems and arrowhead-shaped leaves. (It is not the same as the vegetable called simply Chinese spinach.) When properly prepared, Chinese water spinach offers a delightful contrast between the soft leaf and the still crunchy stem. It is available from some Chinese markets and supermarkets. Europea
