Another Gongdelin restaurant vegetarian dish masquerading as animal protein, this time including diced potatoes and carrots. The egg whites and shreds of yellow yolks simulate the colours of crab meat, hence the name of the dish. This is a quite flavourful simple-to-make vegetarian dish.


  • 225 g/8 oz potatoes, peeled and cut into small dice
  • 225 g/8 oz carrots, peeled and cut into small dice
  • 2 tablespoons peanut oil
  • 2 tablespoons finely chopped garlic
  • 1 tablespoon finely chopped peeled fresh ginger root
  • 1 teaspoon salt
  • ½ teaspoon Freshly ground white pepper
  • 6 eggs, beaten
  • 1 tablespoon sesame oil


Blanch the potatoes and carrots in a large pot of boiling salted water for 2 minutes and drain thoroughly.

Heat a wok or large frying pan until hot. Add the oil, garlic, ginger, salt, and pepper and stir-fry for 30 seconds. Put in the carrots and potatoes, and continue to stir-fry for 1 minute.

Combine the eggs with sesame oil and pour this over the vegetables and stir. Let the mixture cook much like an omelette. When the bottom has turned to a golden brown, turn over and allow the top to brown. Slide the mock crab onto a platter and serve at once.
