Yabbies are a freshwater crayfish. You can substitute an equal quantity of prawns (shrimp) or firm-fleshed white fish.

Ingredients

  • 5 cm (2 in) piece fresh ginger
  • 2 brown (yellow) onions

Method

PEEL AND ROUGHLY CHOP the ginger and onions. Roughly chop the chilli peppers and the tomatoes. Wash and dry the basil and coriander leaves. Place the ginger, onions, chilli peppers, tomatoes, basil and coriander leaves in a food processor or blender with a little of the fish stock and process until you have a fine paste.
