According to the principles of traditional Tibetan medicine, it’s important not only that we eat a broad range of foods, but also that every meal includes different-coloured foods, since each brings different health benefits. This is a dish that will please the doctors, as it’s relatively complete in itself. Make sure you use fresh broccoli – it should never be bendy – and the juiciest tomatoes you can find. Serve with basmati rice. Yeshi’s dal is great on
