Veggie thenthuk is made just as often as meat thenthuk in Tibet, and is widely enjoyed by those who exclude meat from their diet. The use of eggs to make the noodle dough means this dish is not vegan, but you could of course substitute dairy-free noodles and leave out the feta if you wanted to make a vegan version. The soup will still give you all the happiness and warmth offered by this dish, and it will be just as moreish.
