This is another of Yeshi’s mum’s favourites. She likes to add dried lamb or pork fat, which obviously gives the dumplings a whole other dimension, but this version is vegan!

There is something so completely comforting about potato momos – they are very redolent of childhood. The ground cumin in the filling of these ones gives them warmth, but really the trick is to get the right dip for them.
