Carpaccio is such a quick, easy and delightful way to showcase top-quality meat and both the venison and the Highland beef from Rothiemurchus Farm Shop benefit from this simple culinary treatment. Wood sorrel, which grows all over the Highlands, often under juniper bushes or in native woods as its name implies, is a clover-sized leaf tasting of green apples and brings just the right amount of heritage tartness to the carpaccio without introducing lemons or limes.
