We manage to grow a good crop of beetroot in our exposed garden in the hills but, because we use it in so many ways, we never seem to have enough. If we have a fire on the go, we’ll roast the beetroot over it or bake them in foil in the embers, otherwise they get chucked in the oven with roasts or pickled, puréed, grated, mashed, preserved in chutney and baked in cakes.
