Vodka lends itself to a little play with wild berries, plants and fungi. I particularly enjoy soaking freshly picked chanterelles in it as they emit both their delicate flavour and colour. Eight Lands Organic Speyside Vodka is produced just over the hills from my house and its hint of almond and vanilla on the nose and palate marries very well with the apricot flavour of chanterelles.
