This is Peter’s recipe for the delicious tangy marmalade he left for me in the Little Swallow Food Cupboard in Shieldaig. As I drove over the hills from Lochcarron and dropped down into this charming coastal village, I spotted the cupboard on the other side of the cattle grid and was excited to look inside. My instructions were to enjoy a mouthful of marmalade with music ancient or modern, from Bach’s Cello Suites to the latest Burial album – whichever took my fancy.
