When Trisha and George Sutherland took over a croft in Caithness in 1986, they started out with a couple of cows and a crop of brassicas. But, after a visit from a polytunnel salesman in 1991, they sought a crofting grant and began to build tunnels to grow soft fruits in. By 2000 they had increased the growing capacity with some field tunnels, funded by another grant, and Trisha began making preserves in 2003. It sounds easy, but it wasn’t.
